2 medium sized whole-wheat pita bread 3 - 4 medium tomatoes 2 tbsp Extra Virgin Olive Oil 3 tbsp Balsamic Vinegar 1 tbsp Fresh basil 1 - 2 diced garlic cloves 5 tbsp of low-fat, grated Parmesan cheese Mix the olive oil, vinegar, chopped garlic and fresh basil in a bowl. Add diced tomatoes. Let the mixture marinate for an hour at room temperature. Slice open the pitas and place under the broiler for 3-5 minutes until browned. Spoon the mixture on top and sprinkle with the parmesan cheese. Serve immediately.
