1/4 cups rolled oats 1 tbsp chopped fresh rosemary 4 skinless chicken breasts 1 egg white lightly beaten 2/3 cup fat-free plain yogurt 2 tsp wholegrain mustard salt and pepper Combine the rolled oats, chopped fresh rosemary, and salt and pepper. Brush each piece of chicken evenly with a little egg white, then coat in the oat mixture. Place the chicken pieces on a baking sheet and bake in a preheated oven at 400f/200c for about 40 minutes. Test to see if the chicken’s cooked by inserting a skewer into the thickest part – the juices should run clear without a trace of pink. Combine the yogurt and mustard and season with salt and pepper to taste. This will be sauce to serve with the chicken.
