Indian Chicken Tikka
(serves 4)

Ingredients
4 skinless boneless chicken breasts portions
1/2 tsp salt
4 tbsp lemon or lime juice
olive oil, for brushing

Marinade
2/3 cup of fat-free natural yogurt
2 garlic cloves crushed
1 inch or 2.5 cm piece of fresh ginger root grated
1 tsp ground cumin
1 tsp chili powder
1/2 tsp ground coriander
1/2 tsp ground turmeric

Sauce - Mint Raita (try other raita recipes in the "Dip's & Appetizer" section)
2/3 low-fat natural yogurt
1 tsp mint sauce

Cut the chicken into 1 inch cubes. Sprinkle with the salt and citrus juice. Set aside for 10 minutes. To make the marinade, combine all the ingredients in a small bowl until well mixed. Thread the cubes of chicken onto skewers. Brush the marinade over the chicken. Cover and set aside to marinate in the refrigerator for at least 2 hours, preferably overnight. Cook the chicken skewers over the coals, brushing with oil and turning frequently, for 15 minutes or until cooked through.

Meanwhile combine the yogurt and mint sauce to make the sauce to serve with the chicken.
