4-5 whole eggs 12 - 15 egg whites 3/4 cup fat-free cottage cheese 1/4 cup low fat milk sea salt and pepper seasoning of your choice (see ideas below): You can add any combination of the following to the egg mixture: 1. Asparagus and dill (a touch of low-fat feta sprinkled on top once it’s all done but still warm is great, too!) 2. Zucchini, red onion, sliced tomatoes, & basil 3. Red and green pepper, green onions, mushrooms, oregano, & basil (and a sprinkle of low-fat cheddar cheese on top) 4. You can also add chunks of cooked chicken breast Use your imagination! 1. In a large bowl, whisk together above ingredients Mix your "vegetable" ingredients of choice with the egg mixture. Spray a lasagna pan with a touch of Pam and pour mixture into pan. Bake in a pre heated 375 degree oven until just golden and centre is cooked. (about 30-35 minutes) Slice into squares and serve or store in fridge! This is great for breakfast with salsa or for your Lunch Box with a salad. I pour the mixture into individual muffin trays for easy take-out!
