2 ripe tomatoes
1 small red onion
3 tbsp olive or canola oil
1 tbsp lemon juice
1 tbsp whole grain mustard
1 crushed garlic clove
1/2 tsp ground cumin
1/2 tsp ground coriander
14 oz or 400 g of canned lentils (drained)
7 oz or 200 g can of tuna (drained)
2 tbsp chopped fresh cilantro
Pepper to taste
Finely dice the tomatoes. Finely chop the red onion.
To make the dressing, whisk together the oil, lemon juice, mustard, garlic, cumin, and ground coriander in a small bowl until thoroughly combined.
Mix together the chopped onion, diced tomatoes, and drained lentils in a large bowl.
Flake the tuna, and stir it into the onion mix with the chopped cilantro mix.
Pour the dressing over the salad and season with pepper to taste.
