4 cups of mixed salad greens 2 tomatoes cut up 1/2 cup of sliced cucumber 1/4 cup of sliced red onion tbsp of olive oil 2 tbsp of balsamic vinegar dash of dried oregano, basil, and sea salt freshly ground black pepper sprinkle of roasted soy nuts or pumpkin seeds Wash the salad greens. Mix together the salad greens, tomatoes, cucumber and onion in a large salad bowl. To make the dressing place the olive oil, balsamic vinegar, and spices into a screw top jar, and shake adding salt and pepper to taste. Drizzle the dressing over the salad and toss to mix well. Top with the roasted soy nuts or seeds.
